Broccoli Salad

Ingredients: Makes 8-10 servings

  • 6 cups broccoli florets

  • 1/2 medium sweet onion, minced

  • 2 tablespoons Reduced/Low Sugar Craisins

  • 1/4 cup pumpkin seeds

Salad Dressing:

  • 1/2 cup light olive oil mayonnaise (swap: greek yogurt)

  • 1 tablespoon olive oil

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons Truvia® brown sugar

  • salt & pepper to taste


  1. In a large bowl, combine first 3 ingredients in a large bowl.

  2. To make dressing, combine remaining ingredients, stirring with a whisk.

  3. Add dressing to broccoli mixture in small amounts, tossing well.

  4. Make sure broccoli is well coated but not drenched.

  5. Add pumpkin seeds & gently fold into salad.

  6. Chill for 1 hour. Enjoy.
