Crawfish Etouffee

Healthy Dinner Under 60 Minutes

Crawfish Étouffée

Ingredients: Makes 10-12 servings

  • 1lb peeled Louisiana Crawfish tails

  • 1 medium onion, chopped

  • 1 medium bell pepper, chopped

  • 4 garlic cloves, minced

  • 2 bay leaves

  • 2 tbsp unsalted butter

  • 2 tbsp extra virgin olive oil

  • 1 tbsp flour

  • 1 - 2 cups low sodium seafood or chicken stock

  • pinch cayenne pepper

  • 1 tsp smoked paprika

  • 1 tsp granulated garlic

  • sea salt and black pepper

  • 2 tbsp chopped parsley


Directions:

  1. In large saute pan, melt butter and olive oil over medium heat.

  2. Add onions, garlic, and bell pepper. Saute until vegetables are soft.

  3. Add the flour and brown with seasonings to create a simple roux.

  4. Add seafood stock gradually until Étouffée thins slightly.

  5. Add crawfish tails, cayenne pepper and bay leaves.

  6. Add salt and pepper.

  7. Cook for 15 minutes, stirring occasionally. Sauce will thicken. You can add additional stock based on your preference.

  8. Stir in parsley and continue cooking for 5 minutes. Serve over Basmati, jasmine, or brown rice.
