Garlic Roasted Asparagus

Roasted Garlic Asparagus

Ingredients: Makes 4-6 servings

  • 2lbs of thin asparagus spears, trimmed

  • 2 tablespoons extra virgin olive oil or organic coconut oil

  • 2 cloves of garlic, minced

  • 1 – 2 tablespoon Parmesan cheese (optional)

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper or cayenne pepper



Directions:

  1. Preheat oven to 425°F.

  2. In large mixing bowl, add trimmed asparagus and drizzle with olive oil or coconut oil.

  3. Toss to coat the vegetables well.

  4. Sprinkle with salt, pepper, garlic, and cheese.

  5. Arrange asparagus in a single layer on baking sheet.

  6. Bake in oven for 12-15 minutes; adjust baking time based on thickness of asparagus. Enjoy!
