Roasted Garlic Asparagus
Ingredients: Makes 4-6 servings
2lbs of thin asparagus spears, trimmed
2 tablespoons extra virgin olive oil or organic coconut oil
2 cloves of garlic, minced
1 – 2 tablespoon Parmesan cheese (optional)
1 teaspoon sea salt
1 teaspoon black pepper or cayenne pepper
Directions:
Preheat oven to 425°F.
In large mixing bowl, add trimmed asparagus and drizzle with olive oil or coconut oil.
Toss to coat the vegetables well.
Sprinkle with salt, pepper, garlic, and cheese.
Arrange asparagus in a single layer on baking sheet.
Bake in oven for 12-15 minutes; adjust baking time based on thickness of asparagus. Enjoy!
