Herb Roasted Sweet & Red Potatoes
Ingredients: Makes 6-8 servings
4 medium sweet potatoes, peeled, cut into 1 1/2-inch-thick cubes
3 small red potatoes, cut into 1 1/2-inch-thick cubes
2 tablespoons olive oil
1 tablespoon thyme
1 tablespoon parsley
1/2 teaspoon sea salt
1 teaspoon black pepper or red pepper flakes
Directions:
Preheat oven to 425°F.
In large mixing bowl, combine all ingredients and mix well.
Arrange potato pieces in a single layer on coated (cooking spray) baking sheet or in 13×9-inch baking dish.
Place in oven and roast until tender and slightly browned, about 40 minutes. Enjoy!
