Herb Roasted Sweet & Red Potatoes

Ingredients: Makes 6-8 servings

  • 4 medium sweet potatoes, peeled, cut into 1 1/2-inch-thick cubes

  • 3 small red potatoes, cut into 1 1/2-inch-thick cubes

  • 2 tablespoons olive oil

  • 1 tablespoon thyme

  • 1 tablespoon parsley

  • 1/2 teaspoon sea salt

  • 1 teaspoon black pepper or red pepper flakes


Directions:

  1. Preheat oven to 425°F.

  2. In large mixing bowl, combine all ingredients and mix well.

  3. Arrange potato pieces in a single layer on coated (cooking spray) baking sheet or in 13×9-inch baking dish.

  4. Place in oven and roast until tender and slightly browned, about 40 minutes. Enjoy!
