Sweet Corn Succotash

Ingredients: Makes 8 servings

  • 4 cups sweet corn (can use fresh, frozen, or can)

  • 2 cups green zucchini squash, chopped

  • 1 medium green bell pepper, chopped

  • 1 medium sweet onion, chopped

  • 3 garlic cloves, chopped

  • 2 tablespoons extra virgin olive oil or coconut oil

  • 1 teaspoon cayenne pepper

  • 2 tablespoons fresh parsley or cilantro

  • salt and pepper



Directions:

  1. Heat olive oil or coconut oil in a large saucepan over medium-high heat.

  2. Add onions & garlic and cook until soft.

  3. Add bell pepper and saute for additional 3-5 minutes.

  4. Add zucchini and corn.

  5. Add salt, black and cayenne pepper. Stir.

  6. Cover and cook until vegetables are soften.

  7. Fold in parsley. Enjoy.
