Sweet Corn Succotash
Ingredients: Makes 8 servings
4 cups sweet corn (can use fresh, frozen, or can)
2 cups green zucchini squash, chopped
1 medium green bell pepper, chopped
1 medium sweet onion, chopped
3 garlic cloves, chopped
2 tablespoons extra virgin olive oil or coconut oil
1 teaspoon cayenne pepper
2 tablespoons fresh parsley or cilantro
salt and pepper
Heat olive oil or coconut oil in a large saucepan over medium-high heat.
Add onions & garlic and cook until soft.
Add bell pepper and saute for additional 3-5 minutes.
Add zucchini and corn.
Add salt, black and cayenne pepper. Stir.
Cover and cook until vegetables are soften.
Fold in parsley. Enjoy.
