Lemon Thyme Baked Wings
Ingredients: Makes 6 servings (4 wing parts)
2lbs chicken wing parts (1 & 2)
2 tbsp olive oil
1/2c low sodium chicken stock
2 tbsp chili powder
1 tbsp granulated garlic
2-4 sprigs lemon thyme, chopped
sea salt & black pepper to taste
Directions:
Preheat oven to 425F. Spray baking pan(s) with non-stick cooking spray.
In small mixing bowl, mix chili powder, salt, black pepper, & granulated garlic. Mix well.
Place the chicken wings in a large mixing bowl and add coconut oil. Coat well.
Season wings with coconut lime mix seasonings & place in baking pan.
Sprinkle both sides of the chicken wings with lemon thyme.
Add 1/8-1/4c water in each pan. You want enough liquid to cover the bottom of the pan.
Bake in over 45-55 minutes or until crispy and cooked through. Tip: Baste the chicken every 15 minutes with juices in baking pan.
Remove from oven.
Enjoy with two sides of veggies or pair with brown rice & steamed broccoli or just eat them just like that. No sauce required!
