Cabbage Rice
Ingredients: Makes 4-6 servings
3 cups cooked Basmati rice (preferably day old rice)
1 tbsp olive oil
1 small sweet onion, julienne
1/4 purple onion, julienne
2-3 green onions, sliced
1-2 cups Tri-color coleslaw mix (amount is flexible to your taste preference)
2 mini red peppers, chopped
2 mini yellow peppers, chopped
2 mini orange peppers, chopped
1-2 tsp Bragg Liquid Aminos or Low Sodium Soy Sauce
1 tbsp Hoisin Sauce
2 tsp Sesame Seed Oil
2 tsp Kinder's No Salt Added Garlic & Herb Seasoning
Directions:
Heat a large skillet over medium-high heat. Add olive oil, onion, peppers, white portion of green onion. Saute until slightly tender. (once onion begins to become translucent)
Add cabbage to skillet. Mix cabbage with sauteed onions and peppers. Saute cabbage mixture an additional 5-7 minutes or until cabbage is tender but crisp.
Add rice to skillet.
Add Garlic & Herb seasoning, sesame oil, liquid aminos, and hoisin sauce. Stir well. Simmer for 2-3 minutes. Stirring often.
Remove skillet from heat. Stir in green onions.
