Ground Turkey Stroganoff
Ingredients: Makes 4-6 servings
1 lb ground turkey
1 small sweet onion, chopped
7 oz baby bella mushrooms
1 tbsp extra virgin olive oil
2 tbsp unsalted butter
3 garlic cloves, minced
1 tsp smoked paprika
2 tbsp whole wheat flour or all purpose flour
1 tsp dried thyme
1/2 tsp ground black pepper
1/2 - 1 tsp salt
1 1/2 cups low sodium or no sodium chicken stock
1 tbsp Worcestershire sauce
2 ounces Greek cream cheese
12 oz whole wheat egg noddles
Prepare whole wheat egg noddles according to package directions. Set aside.
Add chicken broth to small bowl and gradually whisk in the flour until smooth (lump free). Set aside.
Preheat skillet on medium heat with 1 tbs olive oil.
Add onions and mushrooms. Saute until slightly brown and tender.
Add ground turkey, paprika, thyme, garlic, salt and pepper. Cook until ground turkey is crumbled and brown.
Add Worcestershire sauce and chicken broth mixture. Mix well. Reduce heat to simmer uncovered until sauce has thickened.
Remove from heat. Add cream cheese and stir until smooth. Sour cream can be swapped for cream cheese.
Add noodles to skillet. Mix well.
Serve with side salad or your favorite green veggie on the side.
