Mini Sweet Potato Pie

Mini Sweet Potato Pies

Ingredients: Makes 14-16 servings

  • 1 -2 medium sweet potatoes, mashed (oven baked or boiled)

  • 3/4 ( 14 ounce ) can Fat Free Sweetened Condensed Milk

  • 2 large eggs

  • 2 tbs unsalted butter (we used Smart Balance)

  • 1 tsp vanilla

  • 1 tbsp Swerve Brown Sugar

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg (optional)

  • 2 ( 10 ounce) packages Dutch Ann Frozen Tart Shells


Directions:

  1. Heat oven to 350 F. Arrange pie shells on cooking sheet.

  2. Prepare sweet potatoes according to preference. Whether you prefer to oven bake your sweet potatoes or boil them on the stove top...it's totally up to you. Once soften and cooled, remove the skin and add sweet potatoes to mixing bowl.

  3. In bowl, add butter to sweet potatoes. Mix well.

  4. Add sweetened condensed milk, eggs, cinnamon, nutmeg, vanilla, and Swerve brown sugar to sweet potatoes in the mixing bowl. Mix all ingredients until smooth and well blended.

  5. Fill each mini tart with 1/3 cup of sweet potato pie filling. Each pie should have filling just below edge of crust. This will leave space for when the filling puff up in the oven.

  6. Bake mini sweet potato pies for 40-50 minutes or until inserted knife comes out clean.

  7. Remove pies from oven and allow to cool for 5-10 minutes. Serve with whipped cream or cool whip topping. Switch things up and top with chopped walnuts and drizzle of chocolate....so good! (See video here)
