Panko Crusted Baked Chicken Breast

Ingredients: Makes 8 servings

  • 4 skinless, boneless chicken breasts, split in half (8 breast)

  • 1 tbsp olive oil

  • 1 egg or 3/4c egg whites

  • 1-2 cups Italian panko crumbs

  • 1-2 tbs parsley

  • sea salt & black pepper to taste


Directions:

  1. Preheat oven to 375F.

  2. Spray baking sheet with non-stick cooking spray or use parchment paper.

  3. Drizzle chicken breast with olive oil. Season with salt & pepper. Set aside.

  4. In one bowl, add panko crumbs & parsley. Mix well. In another bowl, add eggs. If using whole egg, whip lightly.

  5. Dip each chicken breast in the egg mixture, then in the bread crumb mixture. Make sure each breast is well coated. You may need to add more panko crumbs.

  6. Arrange the coasted chicken breasts on the prepared baking sheet.

  7. Bake 30-45 minutes or until chicken is no longer pink & juices run clear. Crust will be golden brown.
