Sauteed Tilapia Vegetable Pizza
Ingredients: Makes 6-8 servings
1 12″ Boboli® Whole Wheat Thin Pizza Crust (can also use wheat tortilla wraps for individual pizzas or thin crust of choice)
3/4c Tomato or Pizza Sauce
2 4oz Tilapia Filets, sautéed & crumbled
1/2 tomato, washed & sliced
1/2c sliced jalapeno peppers
1/2c sliced black olives
1 c. sliced mushrooms
1/2 onion, thinly sliced
1/2 green bell pepper, washed & thinly sliced
1/2 tsp. parsley
1 tbsp. fresh garlic, chopped
1 1/2 c. low-fat mozzarella cheese
2 tbsp. olive oil, separated
1 tbsp Smart Balance® Light
Sea Salt & pepper to taste
Preheat oven to 425°F.
Season tilapia filet with salt & pepper.
In large skillet, coat with 1 tbsp olive oil and 1 tbsp Smart Balance® Light.
Place skillet on medium heat.
Place tilapia filets in skillet & sautéed on both sides until done.
Remove from skillet and set aside.
In same skillet, combine all veggies except jalapeno peppers and black olives (season to taste) and sautéed for 5min.
Remove from skillet and set aside to cool. Remember, the veggies will cook in the oven.
Brush the crust with olive oil and spread the pizza/tomato sauce over the Boboli® pizza crust leaving a 1″ border.
Sprinkle half the cheese around crust.
Arrange sautéed vegetables in a single layer.
Add jalapeno peppers and black olives. Add crumbled tilapia.
Add remaining cheese to top of pizza. Sprinkle entire pizza with remaining olive oil.
Place in oven and bake for about 8 – 10 minutes or until cheese is melted.
Remove from oven and let set for 5 minutes. Sprinkle parsley over the top and enjoy!
