Southern Fried Cabbage

Southern Fried Cabbage

Ingredients: Makes 4 servings

  • 1 medium to large head cabbage, chopped (we used green/red cabbage & carrots)

  • 1 medium onion, chopped (we used sweet onion)

  • 1/2 red bell pepper, chopped

  • 1/4 - 1/2 green bell pepper, chopped

  • 3-4 cloves garlic, minced

  • 6oz smoke sausage, sliced

  • 1-2 tbsp extra virgin olive oil

  • 1 tsp granulated garlic

  • 1 tsp smoked paprika

  • 1/4-1/2 cup low sodium chicken stock

  • 1-2 tbsp unsalted butter (optional - we used Smart Balance)



Directions:

  1. Cut cabbage (slice or chop) and set aside in large bowl.

  2. In a large skillet over medium heat, saute smoke sausage until edges crisp slightly. Remove cooked sausage from skillet, set aside.

  3. In the same skillet, add butter, onions, bell peppers, and garlic. Saute seasonings until slightly translucent.

  4. Add cabbage in batches, stirring well until seasonings are thoroughly mixed.

  5. Add granulated garlic, paprika, pepper, and chicken stock. Mix well.

  6. Reduce heat to simmer, cover, and cook cabbage for 10-15 minutes or until softened to your taste preference.

  7. Add smoke sausage. Mix well.
