Apple Thyme Roasted Chicken

Healthy Dinner Under 60 Minutes

Apple Thyme Roasted Chicken

Ingredients: Makes 6-8 servings

  • 3-5 lb whole chicken

  • 3 tbsp extra virgin olive oil

  • 1 medium sweet onion, cubed

  • 1 medium red or green apple, cubed

  • 2 tbsp thyme

  • 2 tbsp rosemary

  • 2 tbsp sage

  • sea salt and pepper


Directions:

  1. Preheat oven to 425°F.

  2. Chop up your herbs and set aside.

  3. Mix salt and pepper in small dish, set aside.

  4. Make sure the outside of the chicken is patted dry with a paper towel. Before we coat the outside of the chicken, we need to fill the cavity.

  5. Drizzle a little olive oil inside the cavity.

  6. Sprinkle cavity with a few pinches of your salt/pepper mixture and herbs. Stuff the chicken with your cubed onion and apples.

  7. Drizzle the olive oil on the whole chicken and underneath skin.

  8. Sprinkle herb mixture and salt/pepper and rub, rub, rub until it is well coated.

  9. Place chicken on roasting pan or 13×9-inch baking dish. Bake for 1 hour until golden brown. (meat thermometer reads 185°F in the thigh meat)

  10. Once the chicken has roasted, let it rest for 10-15 minutes. This will allow the juices of the chicken redistribute & ensure your chicken is moist & delicious.
