Healthy Dinner Under 60 Minutes
Apple Thyme Roasted Chicken
Ingredients:
Makes 6-8 servings
3-5 lb whole chicken
3 tbsp extra virgin olive oil
1 medium sweet onion, cubed
1 medium red or green apple, cubed
2 tbsp thyme
2 tbsp rosemary
2 tbsp sage
sea salt and pepper
Directions:
Preheat oven to 425°F.
Chop up your herbs and set aside.
Mix salt and pepper in small dish, set aside.
Make sure the outside of the chicken is patted dry with a paper towel. Before we coat the outside of the chicken, we need to fill the cavity.
Drizzle a little olive oil inside the cavity.
Sprinkle cavity with a few pinches of your salt/pepper mixture and herbs. Stuff the chicken with your cubed onion and apples.
Drizzle the olive oil on the whole chicken and underneath skin.
Sprinkle herb mixture and salt/pepper and rub, rub, rub until it is well coated.
Place chicken on roasting pan or 13×9-inch baking dish. Bake for 1 hour until golden brown. (meat thermometer reads 185°F in the thigh meat)
Once the chicken has roasted, let it rest for 10-15 minutes. This will allow the juices of the chicken redistribute & ensure your chicken is moist & delicious.
