Healthy Lunch Under 30 Minutes
Balsamic Chicken Wrap
Ingredients: Makes 8 servings
3 boneless/skinless chicken breast, pounded flat
1 onion, thinly sliced
2 tbsp extra virgin olive oil
2 cups arugula, chopped
1 tomato, cubed or Fresh Salsa
1/4 cup black olives, sliced
1/2 cup light Sour Cream or Non Fat Plain Greek Yogurt
1/2 avocado, sliced
1/2 cup Cheddar Cheese
Balasamic Vinaigrette
8 Mission® 96% Fat Free Whole Wheat Wraps

Directions:
Season chicken with salt and pepper. Place chicken breast in large Ziploc bag. Pound with meat tenderizer until thin.
Heat extra virgin olive oil in a small skillet over medium-high heat.
Cook chicken breast until cooked through and juices are clear. Remove from skillet & allow to cool.
In same skillet, sauté onions until soft and translucent, stirring occasionally.
Slice each chicken breast into strips cutting across the breast.
Warm Mission® Tortillas. To Assemble Wraps:
Spread 1 tbsp of light sour cream yogurt in center and expand to edge.
Lay 4 chicken strips across middle.
Top with cheese, tomatoes/fresh salsa, black olives, grilled onions, avocado slices, and top with arugula.
Drizzle 1/2 tsp of balsamic vinaigrette.
