Balsamic Chicken Wrap

Ingredients: Makes 8 servings

  • 3 boneless/skinless chicken breast, pounded flat

  • 1 onion, thinly sliced

  • 2 tbsp extra virgin olive oil

  • 2 cups arugula, chopped

  • 1 tomato, cubed or Fresh Salsa

  • 1/4 cup black olives, sliced

  • 1/2 cup light Sour Cream or Non Fat Plain Greek Yogurt

  • 1/2 avocado, sliced

  • 1/2 cup Cheddar Cheese

  • Balasamic Vinaigrette

  • 8 Mission® 96% Fat Free Whole Wheat Wraps

  • sea salt and pepper


Directions:

  1. Season chicken with salt and pepper. Place chicken breast in large Ziploc bag. Pound with meat tenderizer until thin.

  2. Heat extra virgin olive oil in a small skillet over medium-high heat.

  3. Cook chicken breast until cooked through and juices are clear. Remove from skillet & allow to cool.

  4. In same skillet, sauté onions until soft and translucent, stirring occasionally.

  5. Slice each chicken breast into strips cutting across the breast.

  6. Warm Mission® Tortillas. To Assemble Wraps:

  7. Spread 1 tbsp of light sour cream yogurt in center and expand to edge.

  8. Lay 4 chicken strips across middle.

  9. Top with cheese, tomatoes/fresh salsa, black olives, grilled onions, avocado slices, and top with arugula.

  10. Drizzle 1/2 tsp of balsamic vinaigrette.
