Chicken Lo Mein

Chicken Lo Mein

Ingredients: Makes 4 servings


  • 1/2 lb Barilla protein or whole wheat angel hair pasta

  • 1 lb chicken breasts, sauteed & cubed

  • 2 tbsp extra virgin olive oil

  • 1 medium sweet onion, chopped

  • 2-3 cloves garlic, minced

  • 1 medium green bell pepper, chopped

  • 1/2 - 1 cup pineapple chunks (fresh or frozen)

  • 1-2 tbsp coconut aminos or low sodium soy sauce

  • 1 tsp sweet basil

  • sea salt and black pepper


Directions:

  1. Prepare the pasta according to the directions. Set aside. (BEST to use day-old pasta)

  2. Season both sides of chicken breasts with 2 tsp of cumin, granulated garlic, sea salt, and cracked pepper.

  3. In a large skillet, heat olive oil over medium heat. Add chicken breasts. Cook chicken breasts 5-6 minutes per side.

  4. Remove from skillet and allow to rest, then cut into cubes.

  5. Add onion, bell pepper, and garlic. Saute for 5 minutes or until vegetables have soften.

  6. Add cooked chicken breasts and pineapples. Saute for 3-5 minutes.

  7. Add pasta and coconut aminos. Toss and remove from heat.

  8. Sprinkle chicken lo mein with sweet basil & enjoy!
