Chicken Lo Mein
Ingredients: Makes 4 servings
1/2 lb Barilla protein or whole wheat angel hair pasta
1 lb chicken breasts, sauteed & cubed
2 tbsp extra virgin olive oil
1 medium sweet onion, chopped
2-3 cloves garlic, minced
1 medium green bell pepper, chopped
1/2 - 1 cup pineapple chunks (fresh or frozen)
1-2 tbsp coconut aminos or low sodium soy sauce
1 tsp sweet basil
sea salt and black pepper
Directions:
Prepare the pasta according to the directions. Set aside. (BEST to use day-old pasta)
Season both sides of chicken breasts with 2 tsp of cumin, granulated garlic, sea salt, and cracked pepper.
In a large skillet, heat olive oil over medium heat. Add chicken breasts. Cook chicken breasts 5-6 minutes per side.
Remove from skillet and allow to rest, then cut into cubes.
Add onion, bell pepper, and garlic. Saute for 5 minutes or until vegetables have soften.
Add cooked chicken breasts and pineapples. Saute for 3-5 minutes.
Add pasta and coconut aminos. Toss and remove from heat.
Sprinkle chicken lo mein with sweet basil & enjoy!
