Healthy Breakfast Under 30 Minutes

Chicken Sausage with Sweet Peppers

Ingredients: Makes 5 servings

  • 16 oz (5 links) chicken sausage, sliced

  • 1 tbsp extra virgin olive oil

  • 1 green bell pepper, julienne sliced

  • 1 sweet red pepper, julienne sliced

  • 1 medium sweet onion, julienne sliced


Directions:

  1. Spray cooking spray in skillet.

  2. Add a little water and place sausage in skillet.

  3. Cover and cook sausage on medium heat. Turning often. Approximately 10-15 minutes.

  4. Remove sausage from skillet and set aside. In same skillet, add olive oil, peppers and onion.

  5. Sauté veggies for about 5 minutes.

  6. Add sausage and continue sautéing for another 5 minutes.

  7. Serve with scrambled eggs, roasted sweet potatoes, or serve over rice
