Chicken Sausage with Sweet Peppers
Ingredients: Makes 5 servings
16 oz (5 links) chicken sausage, sliced
1 tbsp extra virgin olive oil
1 green bell pepper, julienne sliced
1 sweet red pepper, julienne sliced
1 medium sweet onion, julienne sliced
Directions:
Spray cooking spray in skillet.
Add a little water and place sausage in skillet.
Cover and cook sausage on medium heat. Turning often. Approximately 10-15 minutes.
Remove sausage from skillet and set aside. In same skillet, add olive oil, peppers and onion.
Sauté veggies for about 5 minutes.
Add sausage and continue sautéing for another 5 minutes.
Serve with scrambled eggs, roasted sweet potatoes, or serve over rice
