Healthy Lunch Under 30 Minutes
Crispy Chicken Sandwich
Ingredients:
Makes 4 servings
2 - 4oz boneless/skinless chicken breasts
2 tsp No Salt Tony Chachere's® Creole Seasoning
1 cup Panko crumbs, crushed
1 tbsp extra virgin olive oil
4 whole wheat buns
1/4 cup Cabot® Reduced Fat Sharp Cheddar Cheese, shredded
1 cup spring mix salad, chopped
1/4 medium tomato, sliced
4 tbsp light olive oil mayonnaise
4 tsp mustard
Optional pickle slices or jalapeno peppers
sea salt and black pepper
Directions:
Preheat oven to 400°F.
Line cookie sheet with foil. Spray with non-stick cooking spray.
Place Panko crumbs in shallow dish. Set aside.
Coat chicken breast with olive oil.
Season both sides of chicken breast with Tony Chachere's® creole seasoning.
Place seasoned chicken breasts inside ziploc bag. Use meat tenderizer and pound chicken breasts until thin.
Cut each breast in half.
Lightly coat each side in crushed panko crumbs.
Place on cookie sheet. Bake for 15-18 minutes, turning once, until juice of chicken is clear and coating is golden brown.
To Assemble Chicken Sandwiches:
Dress whole wheat buns with mayonnaise, mustard, cheese, spring mix, tomato, avocado, and pickles.
Serve with baked sweet potato fries, your favorite chips, or steamed vegetable.
