Egg and Turkey English Muffin

Ingredients: Makes 2 servings

  • 1 large egg

  • 1/2 cup egg whites or Egg Beaters

  • 2 oz of sliced turkey (low sodium or oven roasted turkey)

  • 1/2 tbsp butter, unsalted

  • 1 tsp parsley

  • cooking spray

  • 1 tomato, sliced

  • 2 whole wheat English muffins, toasted (Thomas)

  • salt & pepper


Directions:

  1. Cut English muffins in half; toast. Set aside.

  2. Add eggs and parsley to bowl.

  3. Add salt and pepper and whisk eggs until well blended.

  4. Spray cooking spray in skillet. Add butter and melt over medium heat.

  5. Add eggs and scramble until desired consistency. Remove from heat and set aside.

  6. In same skillet, heat turkey until warm. Set aside.

  7. Place English muffin halves on a plate. Divide eggs, turkey, and tomatoes on two halves of the English muffins. Top with remaining muffin halves.
