Grilled Cumin Chicken

Grilled Cumin Chicken

Ingredients: Makes 4 servings


  • 4 skinless & boneless chicken breast halves (pounded to 1I2-inch thickness)

  • 2 tsp extra virgin olive oil

  • 1 tsp cumin

  • 1 tsp lemon-pepper

  • sea salt and black pepper


Directions:

  1. Spray a grill or nonstick grill pan with cooking spray and heat over

    medium-high heat.

  2. Rub chicken breasts with olive oil.

  3. Combine cumin, lemon-pepper, sea salt and black pepper and rub

    spice mixture evenly onto chicken breasts.

  4. Grill until chicken is cooked through, about 4-5 minutes per side.

  5. Remove from heat, let rest for 5 minutes, then slice into 1/2-inch

    thick slice
