Healthy Lunch Under 30 Minutes
Ground Turkey Burger
Ingredients: Makes 8 servings
2 lbs lean ground turkey
1 onion, chopped fine
1 tsp garlic powder
2 tbsp extra virgin olive oil
2 tbsp Worcestershire sauce
1/2 cup Panko or bread crumbs
1 tbsp parsley
1 tsp Goya® Adobo
1 tsp cayenne pepper
1 tsp black pepper Burger Toppings:
Whole wheat buns
1/4 cup Cabot® Reduced Fat Sharp Cheddar Cheese, shredded
1/4 medium avocado, thinly sliced
1 cup spring mix salad, chopped
1/4 medium tomato, sliced
1 tbsp light olive oil mayonnaise
1 tsp mustard
Optional: pickle or jalapeno pepper slices
Directions:
In large bowl, mix ground turkey, chopped onion, Panko or bread crumbs, Worcestershire sauce, parsley, salt and pepper, Adobo, cayenne pepper, and garlic powder. Form into 8 (4oz) patties.
In skillet over medium heat, add olive oil and cook patties, turning once. Cook burgers to an internal temperature of 180°F. Remove and set aside.
To Assemble Burgers:
Dress whole wheat buns with mayonnaise, mustard, cheese, spring mix, tomato, avocado, and pickles.
Serve with sweet potato fries, 1 serving of your favorite chips, or steamed vegetables.
