Healthy Dinner Under 60 Minutes
Mixed Greens
Ingredients:
Makes 10-12 servings
1 16oz pkg Collard Greens, frozen
1 16oz pkg Mustard Greens, frozen
1 16oz pkg Turnip Greens, frozen
1 16oz pkg Spinach, frozen
8 oz turkey or chicken tasso, cubed
1 medium onion, chopped
2 cloves garlic, minced
2 tbsp extra virgin olive oil
2-4 cups low sodium chicken stock or water
salt and black pepper
cayenne pepper
Options: 2 tbsp white vinegar
Directions:
Heat olive oil in large skillet. Add onions and garlic and sauté lightly.
Add turkey tasso and continue sautéing for 5 minutes.
Add frozen greens and 1-2 cups of chicken stock.
Season with black pepper & cayenne pepper. Taste before adding salt. (Stock tends to salt your dishes without needing to add additional salt.)
Bring to a boil, reduce heat to a simmer, and cook until the greens are tender, stirring occasionally, 30-45 minutes.
