Roasted Asparagus
Ingredients: Makes 4 servings
2 Ibs of thin asparagus spears, trimmed
2 tbsp extra virgin olive oil or organic coconut oil
2 cloves of garlic, minced
1 - 2 tbsp Parmesan cheese (optional)
sea salt and black pepper
Directions:
Preheat oven to 425° F.
In large mixing bowl, add trimmed asparagus and drizzle with olive
oil or coconut oil. Toss to coat the vegetables well.
Sprinkle with sea salt, pepper, garlic, and cheese. Lightly toss &
arrange asparagus in a single layer on baking sheet.
Bake in oven for 12-15 minutes; adjust baking time based on
thickness of asparagus.
