Roasted Asparagus

Ingredients: Makes 4 servings


  • 2 Ibs of thin asparagus spears, trimmed

  • 2 tbsp extra virgin olive oil or organic coconut oil

  • 2 cloves of garlic, minced

  • 1 - 2 tbsp Parmesan cheese (optional)

  • sea salt and black pepper


Directions:

  1. Preheat oven to 425° F.

  2. In large mixing bowl, add trimmed asparagus and drizzle with olive

    oil or coconut oil. Toss to coat the vegetables well.

  3. Sprinkle with sea salt, pepper, garlic, and cheese. Lightly toss &

    arrange asparagus in a single layer on baking sheet.

  4. Bake in oven for 12-15 minutes; adjust baking time based on

    thickness of asparagus.
