Healthy Dinner Under 60 Minutes
Salisbury Steak
Ingredients:
Makes 10 servings
2 1/2 lbs lean ground turkey
1 onion, chopped fine
1 cup mushrooms, sliced
3 cloves garlic, minced
3 tbsp extra virgin olive oil
1 egg, slightly beaten
2 tbsp Worcestershire sauce
1/4-1/2 cup panko bread crumbs
2 tbsp all-purpose flour
1 -2 cups low sodium beef stock
1 tbsp parsley
sea salt and pepper
Directions:
Heat 1 tbsp of extra virgin olive oil in a large skillet over medium-high heat.
Add onion and garlic; cook 5 minutes, stirring occasionally. Transfer mixture to a small bowl; cool 5 minutes.
In a large bowl, add ground turkey, panko crumbs, egg, Worcestershire sauce, parsley, salt and pepper, add 1/2 onion & garlic mixture; mix well.
Shape into 10 (4oz) oval patties. In same skillet over medium-high heat, add olive oil and brown both sides of the patties.
Remove patties from skillet. Set aside.
To make brown gravy or roux for salisbury steaks:
In same skillet with the drippings from turkey burgers, add additional olive oil and heat of medium heat.
Add flour to skillet. Stir consistently until flour browns, turning a peanut butter color. You may or may not need to add additional olive oil or butter.
Add beef stock or water, mushrooms, onion and garlic mixture.
Stir until gravy begins to thicken.
Add additional liquid to adjust gravy thickness.
Add patties to gravy. Reduce heat to low. Cover and allow patties to simmer for 30 minutes.
Serve with mixed salad, steamed green vegetables and roasted or mashed sweet potatoes.
