Sauteed Kale

Sauteed Kale

Ingredients: Makes 4-6 servings

  • 1lb organic kale, large stems removed & leaves chopped

  • 2 tablespoons coconut oil

  • 1 small sweet onion, chopped

  • 3 garlic cloves, chopped

  • 1/2 cup reduced sodium chicken stock

  • 1/2 teaspoon red pepper flakes

  • sea salt & pepper


Directions:

  1. Heat coconut oil in a large saucepan over medium heat.

  2. Add onion and garlic. Cook until soft.

  3. Add chicken stock and kale. Toss to combine well.

  4. Cover and cook for 5-8 minutes.

  5. Remove cover, add red pepper flakes and continue cooking, stirring often. You want to saute your kale until it is tender and most of the liquid is gone.

  6. Season with a pinch of salt and black pepper.
