Quick & Easy Snack Recipes:
Praline Almond Granola Oat Clusters
A crunchy, buttery-sweet topping perfect for yogurt bowls, smoothie layers, or straight-from-the-jar snacking.
Ingredients:
Makes: about 16 servings
Serving Size: 1/4 cup
Storage: Keep in an airtight container in fridge for up to 1 week.
2 cups almonds
2 cups rolled oats
1 cup Kashi Go Lean Honey Almond Flax Cereal
¼ cup raw sugar
2 tablespoons coconut condensed milk
1–2 teaspoons water
2 tablespoons butter (divided)
Cinnamon to taste (optional)
Directions:
Toast the Oats Melt 1 tablespoon of butter in a skillet over medium heat. Add oats and a sprinkle of cinnamon. Sauté until golden brown and aromatic. Remove from heat and set aside.
Make the Praline Base In the same skillet over low heat, add the remaining 1 tablespoon of butter, raw sugar, and coconut condensed milk. Stir continuously until the mixture bubbles and becomes slightly elastic. This will take 3–5 minutes.
Add the Crunch Stir in the almonds, toasted oats, and Kashi cereal. Mix well to coat all ingredients in the praline mixture. Continue stirring for 2–3 more minutes.
Steam & Bind Create a small open space in the center of the skillet. Add 1–2 teaspoons of water. Stir quickly and evenly—this helps everything bind without drying out.
Cool & Set Pour the granola mixture onto a parchment-lined baking sheet. Spread into a thin, even layer. Cool in the fridge for at least 1 hour, ideally overnight.
Break & Serve Once set, crumble into bite-sized clusters. Store in fridge. Use as a topping or snack.
