Sauteed Shrimp
Ingredients: Makes 4 servings
2 lbs medium-large size shrimp, peeled and deveined
1 large Vidalia sweet onion, thinly sliced
6 cloves garlic, minced
2 small orange mini peppers, cut in small rounds
2 tbsp extra virgin olive oil
1 tbsp unsalted butter
1 tbsp Weber's All Purpose Seasoning
1 tbsp parsley
1 tsp sweet basil (optional)
1 pinch cayenne pepper (to taste)
sea salt and black pepper (optional)
Directions:
Using a paper towel, pat the shrimp dry. Place them in a medium-sized bowl. Drizzle a bit of olive oil on top. Season with Weber's All Purpose seasoning and basil. Mix to coat well.
In large skillet, heat 1 tbsp of olive oil and unsalted butter.
Add onion and garlic. Saute until onions are translucent and have begun the process of caramelizing.
Add shrimp. Season with cayenne pepper and black pepper. Saute shrimp until cooked, approximately 2-4 minutes depending upon size of shrimp. Shrimp should be opaque and pink/orange.
Serve sauteed shrimp with your favorite rice, pesto pasta (seen in video below), brown rice, or with large green salad. Enjoy leftovers in a wrap or soft taco.
