Sauteed Tilapia with Sweet Onions
Ingredients: Makes 4 servings
4 (4 oz) tilapia fillets
1 medium onion, thinly sliced
2 tbsp extra virgin olive oil
2 tsp parsley
2 tsp paprika
2 tsp granulated garlic
1 pinch of cayenne pepper
sea salt and black pepper
Directions:
In a medium skillet, heat 1 tbsp olive oil on low, cover & saute onion & peppers about 5 minutes. Set aside
Season tilapia with sea salt, black, paprika, garlic, parsley & cayenne pepper.
In large skillet, heat olive oil and saute tilapia fillets over medium heat, approximately 3-4 minutes per side. Remove tilapia fillets and set aside.
Add onions. Saute onions for about 5 minutes.
Add tilapia fillets to sauteed onions. Cover and cook on low for about 2 minutes. When serving, top sauteed onions over tilapia fillets.
