Sautéed Cabbage

Ingredients: Makes 8 servings

  • 1 large head of cabbage, sliced or chopped

  • 8 oz turkey or chicken tasso, cubed

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 tbsp extra virgin olive oil

  • 1/4 cup low sodium chicken stock or water

  • sea salt and black pepper

  • cayenne pepper

Directions:

  1. Cut the cabbage in half and, with the cut-side down, slice it as thinly as possible around the core.

  2. Heat olive oil in skillet. Add onions and garlic and sauté lightly.

  3. Add cabbage and 1/4 cup of chicken stock or water.

  4. Add turkey tasso, cayenne pepper, salt and black pepper.

  5. Taste before adding salt when using stock. (Stock tends to have enough sodium for your foods).

  6. Saute for 15 to 20 minutes, stirring occasionally, until the cabbage is tender and begins to brown.
