Healthy Breakfast Under 30 Minutes

Scrambled Egg + Turkey Breakfast Pita

Ingredients: Makes 2 servings

  • 1 large egg

  • 1/2 cup egg whites

  • 2 oz of sliced turkey (low sodium or home roasted turkey)

  • 1 tbsp butter, unsalted

  • cooking spray

  • 1/2 cup broccoli florets

  • 1 tomato, diced

  • 2 whole wheat pita bread

  • sea salt and black pepper


Directions:

  1. Add eggs to bowl. Add salt and pepper and whisk eggs until well blended.

  2. Spray cooking spray in skillet.

  3. Add butter and melt over medium heat.

  4. Add broccoli florets. Saute for about 5 minutes.

  5. Add eggs. Scramble until desired consistency.

  6. Add tomatoes. Remove from heat and set aside.

  7. In same skillet, heat turkey until warm. Set aside.

  8. Cut pita in half. Divide eggs and turkey and fill each pita.
