Spinach Parmesan Zucchini Noddles




Spinach Parmesan Zucchini Noddles

Ingredients: Makes 4 servings

  • 3 medium zucchini, spiralized

  • 3 cups fresh spinach

  • 1-2 tbsp olive oil or coconut oil

  • 3 cloves garlic, minced

  • 1/4c Parmesan cheese

  • 1-2 tbs parsley

  • sea salt & black pepper to taste


Directions:

  1. Heat a large skillet over medium-high heat.

  2. Add olive oil and garlic, cook for 1-2 minutes.

  3. Add in the spinach and zucchini noodles.

  4. Gently toss and cook until spinach leaves are wilted & zucchini is slightly tender.

  5. Stir in 1/4 cup of the Parmesan cheese and toss well.

  6. Season with salt and pepper to taste. Enjoy!
