Sunny Side English Muffin

Healthy Breakfast Under 30 Minutes

Sunny Side English Muffin

Ingredients: Makes 2 servings

  • 2 large eggs

  • 2 oz Columbus Herb Roasted Turkey (low sodium option)

  • 2 tsp parsley

  • cooking spray

  • 4 tbsp Paul Newman Chunky Salsal or Let's Cook! Fresh Salsa

  • 2 Thomas whole wheat English muffins, toasted

  • sea salt and black pepper (to taste; be mindful of additional sodium)


Directions:

  1. Cut English muffins in half; toast. Set aside.

  2. Crack eggs in bowl to make sure to avoid any shells & yolk stays in place.

  3. Add salt and pepper to eggs.

  4. Spray pan and heat over medium-low heat.

  5. Gently pour eggs in skillet. Cook over low heat until egg whites are completely set.

  6. Cover and continue cooking until yolks begin to thicken but are not hard.

  7. Remove from heat and set aside.

  8. In small skillet, heat sliced turkey until warm. Set aside.

  9. Place English muffins halves on a plate. Layer muffin with slice turkey, sunny side egg, and salsa. Sprinkle with parsley.

  10. Top with other half of muffin. Enjoy!
