Healthy Dinner Under 60 Minutes

Turkey Meatloaf in Tomato Sauce

Ingredients: Makes 10-12 servings

  • 2 1/2 lbs lean ground turkey

  • 1 onion, chopped fine

  • 3 cloves garlic, minced

  • 2 tbsp extra virgin olive oil

  • 1 egg

  • 2 tbsp Worcestershire sauce

  • 1/2-3/4 cup Panko bread crumbs

  • 3/4 cup Bertolli Tomato & Basil tomato sauce

  • 1/2 tsp sweet basil

  • 1/2 tsp parsley

  • 1/2 tsp sea salt and pepper


Directions:

  1. Heat oven to 350°F.

  2. Heat extra virgin olive oil in a small skillet over medium-high heat.

  3. Add onion and garlic; cook 5 minutes, stirring occasionally.

  4. Transfer mixture to a large bowl; cool 5 minutes.

  5. Add ground turkey, panko bread crumbs, egg, ¼ cup tomato sauce, Worcestershire sauce, parsley, basil, salt and pepper to onion/garlic mixture; mix well.

  6. Press & mold into 13 x 9-inch baking pan.

  7. Spread remaining tomato sauce over top.

  8. Bake 1 hour or until the internal temperature of turkey meatloaf is well-done, 185ºF. as measured by a meat thermometer. Let meatloaf rest a few minutes before slicing.
