Vegetable Saute
Ingredients: Makes 4-6 servings
1/2 lb whole wheat angel hair pasta, cooked (optional)
2 tablespoon coconut oil
1 medium sweet onion, julienned
4-6 mini red & orange sweet peppers, julienned
2 cloves of garlic, minced
2 cups steamed broccoli florets
sea salt and pepper
Directions:
Prepare the pasta according to the directions. Set aside. (Tip: It’s BEST to use day-old pasta)
In a large skillet, heat coconut oil over medium heat.
Cook and stir garlic and onion for about 5 minutes.
Add red and orange peppers, and saute for 5 minutes.
Add steamed broccoli florets, salt, and pepper; continue to cook and stir for about 5 more minutes.
Add cooked pasta & toss until sauteed vegetables are evenly distributed with the pasta.
Try adding grilled/sauteed chicken breast on the side or cut it up in cubes & add to the dish. Enjoy!
