Vegetable Saute

Ingredients: Makes 4-6 servings

  • 1/2 lb Barilla protein or whole wheat angel hair pasta, cooked (optional)

  • 2 tablespoon extra virgin olive oil

  • 1 medium sweet onion, julienned

  • 1/2 red bell pepper

  • 1/2 orange bell pepper, julienned

  • 2-4 cloves of garlic, finely chopped

  • 2 cups steamed broccoli florets

  • sea salt and pepper


Directions:

  1. Prepare the pasta according to the directions. Set aside. (Tip: It’s BEST to use day-old pasta)

  2. In a large skillet, heat olive oil over medium heat.

  3. Cook and stir garlic and onion for about 5 minutes.

  4. Add red and orange peppers, and saute for 5 minutes.

  5. Add steamed broccoli florets, sea salt, and pepper; continue to cook and stir for about 5 more minutes.

  6. Add cooked pasta. Toss until sauteed vegetables are evenly distributed with the pasta.

  7. Add grilled chicken breast or protein of choice on the side or add to the dish. Enjoy!
