Healthy Lunch Under 30 Minutes
Apple Walnut Salad
Ingredients:
Makes 2 servings
1 cup baby spinach
1 cup arugula
2 cups Spring Mix or field greens
1 small green apple, chopped
1/2 cup shredded carrots
1/4 cup walnuts, lightly toasted
Balasamic Vinaigrette Dressing
Directions:
Preheat oven to 350°F.
Place walnuts in single layer on cooking sheet. Bake for 8-10 minutes, until lightly toasted
Place greens in a large bowl.
Add carrots and apples. Sprinkle with walnuts.
Top with Balasamic Vinaigrette Dressing or dressing of choice.
