Avocado Salad

Ingredients: Makes 2 servings

  • 3 cups spring mix salad greens or kale mix salad

  • 1 avocado, pitted, peeled, and sliced

  • 1 tsp fresh parsley

  • 1/4 cup dried lower sugar Craisins

  • 1/4 cup pumpkin seeds

  • 2-4 slices uncured bacon, cooked and crumbled


Directions:

  1. Top spring mix with pumpkin seeds, craisins, bacon, avocado

    slices, and sprinkle with parsley.

  2. Toss with your favorite vinaigrette or salas dressing.
