Avocado Salad
Ingredients:
Makes 2 servings
3 cups spring mix salad greens or kale mix salad
1 avocado, pitted, peeled, and sliced
1 tsp fresh parsley
1/4 cup dried lower sugar Craisins
1/4 cup pumpkin seeds
2-4 slices uncured bacon, cooked and crumbled
Directions:
Top spring mix with pumpkin seeds, craisins, bacon, avocado
slices, and sprinkle with parsley.
Toss with your favorite vinaigrette or salas dressing.
