Baked Cauliflower with Mustard Sauce

Ingredients: Makes 6-8 servings

  • 1 cauliflower head

  • 1/4 cup light olive oil mayonnaise

  • 1/4 sweet onion, minced

  • 1 tbs yellow mustard

  • 1/4 cup cheddar cheese, shredded

  • 1 tbs panko crumbs

  • black pepper to taste


  1. Preheat oven 400F.

  2. Remove leaves and wash fresh cauliflower.

  3. Place cauliflower head on a microwave safe plate with a little water.

  4. Microwave on high for 13-18 minutes or until tender.

  5. Remove from microwave. Set aside. (be careful, the steam will be hot!).

  6. Combine mayonnaise, onion, black pepper, and mustard in a small bowl. Spread over top and sides of cooked cauliflower.

  7. Sprinkle with cheese.

  8. Top with panko crumbs.

  9. Bake cauliflower for 5 minutes just to heat topping and melt cheese.
