Healthy Dinner Under 60 Minutes

Baked Parmesan Chicken Breast

Ingredients: Makes 12 servings

  • 6 skinless, boneless chicken breasts, split in half (12 breast)

  • 2 tbsp extra virgin olive oil

  • 3 clove garlic, minced

  • 1 cup Panko Italian bread crumbs, crushed

  • 2 tbsp sweet basil

  • sea salt and black pepper


Directions:

  1. Preheat oven to 350°F.

  2. Lightly grease a 9x13 inch baking dish.

  3. In a bowl, blend the olive oil and garlic.

  4. In a separate bowl, mix the bread crumbs, basil, and pepper.

  5. Dip each chicken breast in the oil mixture, then in the bread crumb mixture.

  6. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.

  7. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
