Blueberry Oatmeal Crunch
Ingredients: Makes 2 servings
1/2 cup steel-cut oats
1 3/4 cup vanilla Almond milk, unsweetened
1 tsp cinnamon
1/4 cup Kashi® Go Lean Crunch Cereal
1/2 tbsp Smart Balance® Light or unsalted butter
dash sea salt
2 tsp honey or sweetener of choice
Optional Toppings: fresh fruit, craisins, or nuts
Directions:
Bring almond milk and salt to a light boil in a saucepan.
Stir oats into boiling milk. Cook oats until thick and soft, approximately 20 minutes.
Stir in smart balance and cinnamon into cooked oats. Continue cooking for about 5-10 minutes, stirring frequently.
Divide oatmeal into two bowls and sprinkle sugar/sweetener and Kashi® Go Lean Crunch Cereal. Enjoy!
Optional: Swap out Kashi Cereal for fresh fruits/nuts.
