Broccoli Salad


Chicken Pasta Bake

Healthy Dinner Under 60 Minutes

Broccoli Salad

Ingredients: Makes 8 servings

  • 6 cups broccoli florets

  • 1/2 medium sweet onion, minced

  • 2 tablespoons Reduced Sugar Craisins

  • 1/4 cup pumpkin seeds

Salad Dressing:

  • 1/2 cup light olive oil mayonnaise (swap: Greek yogurt)

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar

  • 2 tbsp Truvia® brown sugar

  • salt & pepper to taste


Directions:

  1. In a large bowl, combine first 3 ingredients. Chill.

  2. To make dressing, combine remaining ingredients, stirring with a whisk.

  3. Add dressing to broccoli mixture in small amounts, tossing well.

  4. Make sure broccoli salad is well coated but not drenched.

  5. Add pumpkin seeds & gently fold into salad.

  6. Chill for 1 hour.
