Healthy Dinner Under 60 Minutes
Broccoli Salad
Ingredients:
Makes 8 servings
6 cups broccoli florets
1/2 medium sweet onion, minced
2 tablespoons Reduced Sugar Craisins
1/4 cup pumpkin seeds
Salad Dressing:
1/2 cup light olive oil mayonnaise (swap: Greek yogurt)
1 tbsp olive oil
2 tbsp balsamic vinegar
2 tbsp Truvia® brown sugar
salt & pepper to taste
Directions:
In a large bowl, combine first 3 ingredients. Chill.
To make dressing, combine remaining ingredients, stirring with a whisk.
Add dressing to broccoli mixture in small amounts, tossing well.
Make sure broccoli salad is well coated but not drenched.
Add pumpkin seeds & gently fold into salad.
Chill for 1 hour.
