Healthy Dinner Under 60 Minutes
Chicken Nachos
Ingredients:
Makes 4 servings
2 oz (or approx. 48 chips) Tostitos bite size corn chips
2 4oz chicken breast, cooked & shredded
1 cup reduced fat sharp cheddar cheese
1 cup reduced fat mozzarella cheese
1 medium tomato, chopped or Fresh Salsa
1 cup jalapeno peppers
1/2 cup black olives, sliced
1 cup black beans, rinsed & drained or refried beans
low fat sour cream or plain Greek yogurt
Directions:
Preheat oven to 400°F.
Arrange the tortilla chips on a large baking sheet.
Top chips with black beans or re-fried beans, shredded chicken, tomatoes, black olives, cheese, and jalapeño peppers.
Bake nachos for 10-15 minutes or until the cheese is melted.
Garnish chicken nachos with sour cream, avocado slices, and additional salsa.
