Chicken Nachos


Shrimp and Broccoli rice

Healthy Dinner Under 60 Minutes

Chicken Nachos

Ingredients: Makes 4 servings

  • 2 oz (or approx. 48 chips) Tostitos bite size corn chips

  • 2 4oz chicken breast, cooked & shredded

  • 1 cup reduced fat sharp cheddar cheese

  • 1 cup reduced fat mozzarella cheese

  • 1 medium tomato, chopped or Fresh Salsa

  • 1 cup jalapeno peppers

  • 1/2 cup black olives, sliced

  • 1 cup black beans, rinsed & drained or refried beans

  • low fat sour cream or plain Greek yogurt


Directions:

  1. Preheat oven to 400°F.

  2. Arrange the tortilla chips on a large baking sheet.

  3. Top chips with black beans or re-fried beans, shredded chicken, tomatoes, black olives, cheese, and jalapeño peppers.

  4. Bake nachos for 10-15 minutes or until the cheese is melted.

  5. Garnish chicken nachos with sour cream, avocado slices, and additional salsa.
