Cranberry Avocado Salad

Healthy Lunch Under 30 Minutes

Cranberry Avocado Salad

Ingredients: Makes 2 serving

  • 3 cups baby spinach, arugula, field greens

  • 2/3 ripe avocado, peeled, seeded, and sliced

  • 1/8 cup dried cranberries

  • 1/2 cup tomato, chopped

  • 1/2 cup mushrooms, sliced

  • 1/4 cup low fat cheddar/Colby cheese

  • 1/2 cup carrots, shredded

  • Balasamic Vinaigrette Dressing


Directions:

  1. Place greens in a large bowl.

  2. Add tomatoes, carrots, mushrooms, and cheese.

  3. Toss salad gently, combining ingredients.

  4. Top with avocado slices.

  5. Optional: Sprinkle lightly with salt and freshly ground black pepper.

  6. Top with Balasamic Vinaigrette Dressing or dressing of choice.
