Healthy Lunch Under 30 Minutes
Cranberry Avocado Salad
Ingredients: Makes 2 serving
3 cups baby spinach, arugula, field greens
2/3 ripe avocado, peeled, seeded, and sliced
1/8 cup dried cranberries
1/2 cup tomato, chopped
1/2 cup mushrooms, sliced
1/4 cup low fat cheddar/Colby cheese
1/2 cup carrots, shredded
Balasamic Vinaigrette Dressing
Directions:
Place greens in a large bowl.
Add tomatoes, carrots, mushrooms, and cheese.
Toss salad gently, combining ingredients.
Top with avocado slices.
Optional: Sprinkle lightly with salt and freshly ground black pepper.
Top with Balasamic Vinaigrette Dressing or dressing of choice.
