Healthy Snacks Under 30 Minutes

Fresh Guacamole

Ingredients: Makes 4 servings

  • 3 large rip avocados

  • 1/2 jalapeno pepper, seeded and chopped

  • 1/2 red onion, finely chopped

  • 2 cloves of garlic, minced

  • 1 tomato, chopped

  • 2 tbsp cilantro, chopped

  • 2 tbsp fresh lime juice

  • sea salt and black pepper (to taste)


Directions:

  1. Cut avocados in half. Remove the seed. Scoop out avocado from peel and put in mixing bowl.

  2. Using a fork, roughly mash the avocado. It should be a little chunky.

  3. Add the chopped onion, garlic, salt, pepper, lime juice, peppers, tomatoes, and cilantro.

  4. Lightly mix guacamole. Serve with tortilla chips, pita chips, or fresh veggies.
