Healthy Snacks Under 30 Minutes
Fresh Guacamole
Ingredients:
Makes 4 servings
3 large rip avocados
1/2 jalapeno pepper, seeded and chopped
1/2 red onion, finely chopped
2 cloves of garlic, minced
1 tomato, chopped
2 tbsp cilantro, chopped
2 tbsp fresh lime juice
sea salt and black pepper (to taste)
Directions:
Cut avocados in half. Remove the seed. Scoop out avocado from peel and put in mixing bowl.
Using a fork, roughly mash the avocado. It should be a little chunky.
Add the chopped onion, garlic, salt, pepper, lime juice, peppers, tomatoes, and cilantro.
Lightly mix guacamole. Serve with tortilla chips, pita chips, or fresh veggies.
