Grilled Chicken Quiche

Ingredients: Makes 6-8 servings


  • 2 eggs

  • 3/4c Egg Beaters® or egg white substitute

  • 1 1/2 cup almond milk, unsweetened

  • 6 oz skinless/boneless chicken breast, grilled & cubed

  • 1 cup steamed broccoli florets

  • 1 tbsp extra virgin olive oil or coconut oil

  • 2 tsp parsley

  • 1 cup sharp cheddar cheese, shredded

  • 1 pinch of cayenne pepper

  • 1 frozen deep-dish pie crust (prepare according to directions)

  • sea salt and black pepper


Directions:

  1. Set up your grill for direct cooking on high. In a medium bowl, whisk

    eggs, egg beaters, almond milk, parsley, sea salt and black pepper. Set

    aside.

  2. Steam broccoli according to package directions. Remove any long

    or tough stems. Season to taste. Set aside.

  3. Season chicken breasts with sea salt and black pepper. Place on

    grill until chicken is done. Remove from grill and set aside to rest before

    cutting in cubes.

  4. With frozen pie crust, layer chopped chicken breast and broccoli.

  5. Repeat layers. Top with cheese. Pour egg mixture into pie crust.

  6. Place the chicken quiche on baking sheet. Place baking sheet with quiche

    on grill over direct heat, close the lid.

  7. Cook the quiche for around 45minutes or until firm and a knife poked into the quiche emerges clean

  8. Remove from the grill and allow to rest for 5 minutes.
