Healthy Dinner Under 60 Minutes

Herb Roasted Chicken Drumsticks

Ingredients: Makes 8 servings

  • 16 (2 lbs) chicken drumsticks

  • 2 tbsp extra virgin olive oil

  • 2 tbsp thyme

  • 2 tbsp rosemary

  • 2 tbsp parsley

  • 1/4 cup water or low sodium chicken stock (enough to cover the bottom)

  • sea salt and pepper

  • Optional seasonings: smoked paprika, granulated garlic Weber All Purpose Seasoning


Directions:

  1. Preheat oven to 425°F.

  2. Coat the chicken with olive oil and season with thyme, rosemary, salt and pepper.

  3. Place chicken drumsticks in 13x9 baking dish.

  4. Add enough liquid to cover the bottom slightly.

  5. Bake for 30-45 minutes, or until a meat thermometer reads 185°F.

  6. Tip: Baste chicken with additional chicken stock or pan drippings every 15-20 minutes during the roasting process.
