Herb Roasted Sweet & Red Potatoes

Ingredients: Makes 8 servings

  • 4 medium sweet potatoes, peeled, cut into 1 1/2-inch thick cubes

  • 3 small red potatoes, cut into 1 1/2-inch thick cubes

  • 2 tablespoon extra virgin olive oil

  • 1 tablespoon thyme

  • 1 tablespoon parsley

  • sea salt & black pepper


Directions:

  1. Preheat oven to 425°F.

  2. In large mixing bowl, combine all ingredients and toss.

  3. Arrange potato pieces in a single layer on heavyweight rimmed baking sheet or in 13×9-inch baking dish.

  4. Place on middle rack of oven and roast until tender and slightly browned, about 40 minutes.
