Healthy Lunch Under 30 Minutes

High Fiber Turkey Sandwich

Ingredients: Makes 1 serving

  • 2 slices Dave's Killer Bread Whole Grain Bread (or wheat bread of choice)

  • 2 oz of sliced turkey or chicken (low sodium or oven roasted)

  • 1/4 oz Cabot® Reduced Fat Sharp Cheddar Cheese, shredded

  • 1/8 medium avocado, thinly sliced

  • 1/2 cup spring mix salad

  • 1/4 medium tomato, sliced

  • 1 tbsp olive oil mayonnaise

  • 1 tsp mustard

  • jalapeño pepper slices or pickle slices optional


Directions:

  1. Toast bread Dave's Killer Bread to likeness.

  2. Add olive oil mayonnaise and mustard on both slices of bread.

  3. Layer 1 bread slice with spring mix, tomatoes, avocado, and peppers or pickles (optional.)

  4. Layer other bread slice with shredded cheese and slice turkey (cold or slightly heated in skillet sprayed with cooking spray).

  5. Press two sides together lightly and serve with favorite chips or veggies
