Healthy Dinner Under 60 Minutes
Mashed Sweet Potatoes
Ingredients:
Makes 8 servings
6 (4-5lbs) sweet potatoes, peeled and cubed
1 cup unsweetened almond milk, vanilla
2 tbsp unsalted butter
1 tbsp granulated garlic
1 tbsp parsley
sea salt and black pepper
Directions:
Add sweet potatoes to large pot. Cover with water. Add salt and bring to a boil. Cook for 20 minutes or until fork tender. Drain.
Return sweet potatoes to large pot.
Add butter and 1/4 cup of almond milk. Begin mashing the sweet potatoes.
Slowly add additional almond milk, 1/4 cup at a time, until desired texture.
Add granulated garlic, salt, black pepper, and parsley. Blend until smooth.
