Healthy Dinner Under 60 Minutes

New Orleans Stuffed Bell Pepper

Ingredients: Makes 14 servings

  • 7 large green bell peppers, cut in half & seeded

  • 2.5 lbs ground turkey

  • 1 lb crawfish tails

  • 1 8oz package turkey tasso

  • 1 medium sweet onion, chopped

  • 3 garlic cloves, chopped

  • 1 green bell pepper, chopped

  • 2 tbsp extra virgin olive oil

  • 2 tbsp parsley

  • 2 tbsp thyme

  • 1 cup reduced fat cheddar cheese

  • 1 cup panko bread crumbs

  • 1 tsp cayenne pepper

  • sea salt and pepper


Directions:

  1. Preheat oven to 350°F.

  2. In large skillet over medium heat, add olive oil, onions, garlic, and bell pepper. Saute for 5 minutes.

  3. Add ground turkey. Season with salt, black pepper, and cayenne pepper. Cook until ground turkey is cooked. Drain excess water/fat.

  4. Add turkey tasso, and cook for 5 minutes.

  5. Add peeled/deveined shrimp or crawfish tails, thyme, and parsley. Cook for 2 minutes.

  6. Add cheese; stirring in 1/4c at a time. The cheese will help to bind the turkey mixture with the bread crumbs.

  7. After cheese is melted and mixed well, add 1/2 cup of bread crumbs. Only add additional breadcrumbs depending upon the consistency you want for your stuffing mixture.

  8. Place the bell pepper halves in a baking dish.

  9. Stuff each bell pepper half with the turkey stuffing.

  10. Lightly sprinkle the top with bread crumbs.

  11. Add just a little water to cover the bottom of baking pan. The steam from the water will cook the peppers. Bake for 30-45 minutes or until peppers are tender and stuffing has nice toasty top.
