Healthy Dinner Under 60 Minutes
New Orleans Stuffed Bell Pepper
Ingredients:
Makes 14 servings
7 large green bell peppers, cut in half & seeded
2.5 lbs ground turkey
1 lb crawfish tails
1 8oz package turkey tasso
1 medium sweet onion, chopped
3 garlic cloves, chopped
1 green bell pepper, chopped
2 tbsp extra virgin olive oil
2 tbsp parsley
2 tbsp thyme
1 cup reduced fat cheddar cheese
1 cup panko bread crumbs
1 tsp cayenne pepper
sea salt and pepper
Directions:
Preheat oven to 350°F.
In large skillet over medium heat, add olive oil, onions, garlic, and bell pepper. Saute for 5 minutes.
Add ground turkey. Season with salt, black pepper, and cayenne pepper. Cook until ground turkey is cooked. Drain excess water/fat.
Add turkey tasso, and cook for 5 minutes.
Add peeled/deveined shrimp or crawfish tails, thyme, and parsley. Cook for 2 minutes.
Add cheese; stirring in 1/4c at a time. The cheese will help to bind the turkey mixture with the bread crumbs.
After cheese is melted and mixed well, add 1/2 cup of bread crumbs. Only add additional breadcrumbs depending upon the consistency you want for your stuffing mixture.
Place the bell pepper halves in a baking dish.
Stuff each bell pepper half with the turkey stuffing.
Lightly sprinkle the top with bread crumbs.
Add just a little water to cover the bottom of baking pan. The steam from the water will cook the peppers. Bake for 30-45 minutes or until peppers are tender and stuffing has nice toasty top.
