Healthy Dinner Under 60 Minutes
Roasted Cauliflower
Ingredients:
Makes 8 servings
2 medium head cauliflower, separated into florets
3 garlic cloves, minced
2 tbsp extra virgin olive oil
2 tbsp parsley
1/4-1/2 cup Parmesan cheese, grated
sea salt and black pepper
Directions:
Preheat oven to 400°F.
Spray baking dish with cooking spray.
In large mixing bowl, add cauliflower florets, olive oil, garlic, parsley, salt and pepper. Toss well, making sure cauliflower is coated evenly.
Place cauliflower in baking dish and roast for 30-40 minutes. Toss occasionally.
Within the final 5-10 minutes of cooking, sprinkle Parmesan cheese and roast cauliflower until tender.
