Healthy Dinner Under 60 Minutes
Roasted Red Potatoes
Ingredients:
Makes 8 servings
8 medium red potatoes, cut into 1/2"- 1"thick cubes
2 tablespoon extra virgin olive oil
2 tablespoon parsley
sea salt & black pepper
Directions:
Preheat oven to 425°F.
In large mixing bowl, combine all ingredients and toss.
Arrange potato pieces in a single layer on baking sheet or in 13×9-inch baking dish.
Place on middle rack of oven and roast until tender and slightly browned, about 40 minutes.
